1 day during work suddenly an idea strikes me, I can use it to cook sesame oil chicken (麻油鸡).. Went in search of the receipe and modified abit to suit the clay pot that I will be using.
Ingredients:
- Half a chicken. I brought the them in NTUC, prepack but stil need to chop them into smaller pieces.
- 7 slices of ginger, sliced thinly
- 1 small can of button mushrooms (蘑菇), cut into 4 pcs /pc
- 2 1/2 table spoons of sesame oil and 1 1/2 table spoon of olive oil
- 50ml water mixed with 1 1/2 tablespoon of dark soy sauce and 1 tablespoon of light soy sauce.
Cooking method:
- Heat the sesame oil and olive oil in the claypot and add in ginger strips.
- Stir till fragrant
- Add in chicken and stir fry for a few minutes
- Pour in the water mixture and mix well with the chicken
(I waited till the chicken seems to be cooked before adding in the water mixture.)
- Allow the chicken to cook in the mixture, stirring them occassionally to mix well.
- Pour in the button mushrooms
- When the water starts to boil, reduce heat to small, cover the lit for it to simmer for at least an hr.
- Check and make sure water doesnt dry up, hot water should be added if water is drying up.
Conclusions:
As I wanted the chicken to abosrb more of the taste thus I leave it to simmer for an hour though the receipe states that it is ready after simmering for 5 mins.
Not sure whether due to the claypot I used, the chicken was actually beri tender after an hour of cooking. The taste of the sesame oil and mixture was well absorbed by the chicken.
Only disappointing part is the water dry up due to my neglection and we didnt have more gravy to go with our rice.
Overall is good and am happie that Mr Love cleaned out the chicken..
This will definitely be on my must cook list!
